As requested, here is my Green Zebra Tomato Sauce. This can be adapted to use just unripe green tomatos as well, as I did do that, too, but in my opinion (as the maker of this sauce) the Green Zebras taste so much better with the rest of the ingredients simply because of their peppery aftertaste.
Ingredients:
2-3 pounds of Green Zebra (or unripe green-any variety) tomatos chopped into 1/2 to 1 inch chunks (leave the peels on)
2-3 medium sized Black Hungarian (or other HOT pepper) chopped VERY VERY finely
3-4 cloves of peeled and finely sliced garlic (I use LOTS more because I made a few jars of it and we LOVE LOVE LOVE garlic around this place)
1 large yellow onion
1-2 teaspoons chili powder (to taste-we love hot stuff here)
basil to your liking (again, we love basil…we are HUGE lovers of herbs in our foods, so I used a lot, probably 2-3 tablespoons of my own dried Genovese Basil)
1 1/2 Tablespoons of Kosher salt (more or less, to taste)
1 Tablespoon Turbinado (raw sugar)
olive oil
arrowroot

With everything peeled chopped and sliced as necessary, put into a saucepan of warmed olive oil the garlic and onion. Saute until the onion is clear and the garlic is sweet (what cook doesn’t taste their own concoctions as they go?)
Once the onion is clear and the garlic sweet, add the peppers (if not adding peppers, omit this step.) Saute until the peppers are soft. Add the salt.
Once the peppers are soft, add the chopped tomatos (you can either chop the tomatos by hand, or use a food processor. If you use a processor, you will end up with more liquid than chunk. We love chunk so I do half by hand and half by processor.) Mash the tomatos a little in the pan to release thier liquid a little more. Your mixture in the pan should be watery…too watery to stick to anything. Add the basil and sugar. Turn temp down low and simmer for about 5 -10 minutes.
Your sauce should be VERY watery at this point. Now add, while stirring with a wooden spoon, the arrowroot. I don’t measure, I just add it until I like the consistency of the sauce. (Arrowroot is a thickener…my preferred thickener.)
Remember to taste test all the way through….it is fun. I even boil up a cup of noodles to enjoy a little bit freshly done if I ammaking it to can.
